Pierce Bowers has been making pasta since before it was a personality trait.
Thirteen years in Charleston's finest kitchens — Circa 1886, SNOB, Muse Restaurant and Wine Bar. He was the opening chef at Lula Drake, where he built a food program from scratch in a kitchen that couldn't fit a half-sheet pan.
He spent time as Chef de Cuisine at Black Rooster under Frank Bradley — now head chef at Hendrix, the restaurant directly above Dorsia Pasta Co.'s front door. That is not a coincidence.
Since 2020, Pierce has run Dorsia as a solo operation — wholesale pasta for Columbia's best restaurants, sold-out pop-up dinners, and classes that book within hours of going live.
